Most foreign visitors to Pattaya during Songkran are focused on water, not fish. There is a quieter, less-discussed fact about the timing of the holiday that is worth knowing: Norwegian salmon quality typically peaks in early April.

The supply chain behind the timing

Atlantic salmon farmed in Norwegian waters has a seasonal cycle that produces its highest fat content and best texture in the cool months of the northern hemisphere — January through March, peaking around early April. By the time the fish reaches Bangkok wholesale a few days later, the salmon in mid-April rotations is among the best the wholesale market sees in the calendar year.

This is not marketing. It is biology and logistics. Most Pattaya diners don't notice because most diners are not buying salmon on the basis of which week of the year produces optimal texture. But if you are in Pattaya during Songkran and you eat sushi during the holiday, you are benefiting from a supply-chain coincidence that the menu does not advertise.

What to order
