The December reservation calculus

If you intend to eat sushi in Pattaya on December 31, you needed to reserve in October. If you intend to eat sushi on January 1, you can usually walk in. The two facts together describe a holiday-season pattern most diners miss.

What fills first

December 24 (Christmas Eve): fills two weeks ahead. Most premium restaurants in Pattaya, including the small specialty rooms, are full by mid-December.

December 31 (New Year's Eve): fills three to four weeks ahead. The biggest dinner night of the year for most rooms.

December 25 (Christmas Day): variable. Often less crowded than the Eve because many tourists travel that day. Walk-in possible.

January 1 (New Year's Day): usually quiet. Most tourists are recovering from the previous night. Walk-in usually possible. One of the best nights of the holiday season for a quiet small-room dinner.

Why specialty rooms fill differently

The large hotel restaurants in Pattaya manage holiday volume through set menus and elevated pricing. They can absorb significant demand on the big nights. Small specialty rooms cannot. Sixteen seats is sixteen seats. Once the reservations are taken, they are gone.

This means specialty room demand concentrates earlier in the booking cycle. If you want Wano on the 24th or the 31st, the safe booking window starts in mid-November.

What we do for the holidays

We do not run a fixed holiday menu. The kitchen runs the same daily catch and chef's selection that runs the rest of the year. We do not raise prices for the holiday week. Guests who reserve in October pay the same prices as guests who walk in on a Tuesday in March.

What we do is take fewer covers per night during the busiest weeks, so the kitchen can maintain pacing. This means fewer reservations are available, which means earlier booking matters more than during regular months.

The quiet recommendation

If you want a memorable holiday-season dinner without the booking pressure, target December 26, December 27, or January 1. These three nights are the year's most underrated dinner windows. The room is calm, the fish is excellent, and the conversation can actually happen.
